Gubadiya is one of the most iconic symbols of Tatar cuisine. It is a multi-layered festive pie filled with kort (a unique dried cottage cheese, slowly caramelized to an amber color), rice, and raisins. Gubadiya is traditionally served at weddings, Sabantuy celebrations, and other important gatherings. Its sweet-savory flavor profile is unlike anything else in world cuisine.

Echpochmak (meaning "triangle" in Tatar) is the hallmark of Tatar cuisine. This triangle-shaped pie is filled with finely diced beef, potato, and onion, wrapped in thin golden pastry.
